When the user provides additional arguments to either
fs.stability or fs.ensembl.stability this function will
extract the parameters to be fit if optimization is not used i.e.
optimize = FALSE.

Arguments
theDots
List of additional arguments
method
Vector of strings listing models to be fit
Value
Returns a list of the following elements
parameters
The parameters that will be fit to models
pnames
The names of the specific parameters
